Honeynut Cereal bar



The good thing about this recipe is that you can customize 100% and put any ingredients you like.

Mine contains nuts, honey, dried cherry and cheerios.

Ingredients:
2 1/2 cups cheerios, 1/2 cup chopped nuts, 1/4 dried cherry, 4TBSP butter, 1/4 cup brown sugar, 1/2tsp ground cinnamon, 1/4 cup honey, and a pinch of salt



Directions:

1.  Line an 8-inch square baking pan with 2 pieces of parchment paper.
2. In a medium sauce pan, combine butter, sugar, honey, salt , anf cinnamon. Bring to a boil, stirring constantly. continue for 1 to 2 minutes, then immediately remove from heat.
3. Stir in cereal, nuts, and cherries.  Pour into lined pan, pressing down with a rubber spatula.  Let cool completely, and cut into squares.

How to make cake pops

The cake pops are fun to have for any type of party.  For my daughter's birthday I decided to make cake pops instead of cupcake to try something different.





Ingredients

1 box cake mix of your choice
1/2 cup cream cheese frosting
lollipop sticks
1 bag red candy melts (candy melt can be found in craft stores)
2 bags green candy melts

1 Styrofoam brick

Serves 8-24

Preparation


  • When the cake has cooled, use your hands to crumble it into a large mixing bowl. The crumbs should be no larger than the size of peas. Add 1/2 cup of the frosting and stir to combine. To see if the cake pops will hold their shape, pinch a piece of the cake mixture between your fingers. If it sticks together, it's perfect. If not, add another 1/4 cup frosting and stir to combine.
  • Using a small ice cream scoop or your hands, form 1 1/2-inch balls of cake. Place them on a baking sheet that has been lined with parchment paper. Make at least 1 dozen small cake balls for the caterpillar's body, then use a larger ice cream scoop or your hands to form a 2 1/2-inch ball for the head. (Make an extra one if they're fragile.) Once all of the balls have been formed, place them in the freezer for 1-3 hours.
  • Before removing the cake balls from the freezer, melt the green candy melts in a glass bowl in the microwave for 30-second intervals, stirring in between until they're melted. (It should take 60-120 seconds total.) To form the cake pops, dip the end of one lollipop stick 1/2" into the candy melts. Poke the stick into a cake pop, making sure it only goes halfway through. (This will help the pop adhere to the stick.) Then dunk the entire pop into the melted green candy, and gently spin the pop over the bowl to remove any excess drips. Poke the lollipop stick into the Styrofoam to let the cake pop dry.

Rolled Omelet : Kid-friendly

How unique is that?  you can roll omelet and hide a lot of veggies from a picky eater like my 4 year-old daughter.  It is also fun to eat.

Here are my secrets revealed. 

Ingredients:  1 cup spinach, 10 eggs(6 eggs and 4 whites), 3TBSP water, 3 TBSP milk, 1.5 TBSP flour, a pinch of salt, 1/2 carrot, 1/3 cup cheddar cheese grated




1.  Chop 1/2 carrot finely.  In a pot, cook spinach in boiling water until it gets tender.  It takes about 2-3 min.  Chop cooked spinach finely just like a next picture down below. Set them aside.


2. Preheat the oven to 375F. 



3. In a large bowel, mix 10 eggs (6eggs and 4 whites to reduce cholesterol),  water, flour, milk and a pinch of salt.  whisk them until all ingredients are well incorporated.  


4.  Grease the shallow baking pan and place a parchment paper on it.  Pour egg mixture into the pan.  Sprinkle carrots, spinach and cheese on top of the mixture.  Bake it for 12 min at 375 F.


5.  Take it out of the oven when done.  Now, it is time to roll.  Caution!  This is extremely hot.  Roll the omelet into a cylinder and cut into smaller pieces.  When rolling, pull the parchment paper towards you.  

 

If your picky eaters don't show interest,  serve with ketchup.  And don't forget to praise them for trying.

Spicy tofu-food photography

Spicy Tofu
Ingredients:
1 tofu
a pinch of salt
200ml water 
1 TBSP olive oil
For the sauce: 1 TBSP pepper flakes,  2 chopped green onions, 3 TBSP soy sauce, 1TBSP minced garlic, 1 tsp sesame seeds, a pinch of black pepper

Preperation
1. Cut the tofu into a size of 1.5 in wide and 1/4 in thick.   In a plate, sprinkle a pinch of salt over tofu and set them along on the side.

2. In a meanwhile, mix all the sauce ingredients in a medium bowl.

3.  Heat the olive oil in the pan on a medium heat and cook tofu until brown.
4. Pour the sauce mixture and water into the pan and cook covered on a low medium heat until the sauce is reduced in a half.  This will take about 15 min.
 


bite-sized beef with vegetables

My 3-year old toddler is a very picky eater. She doesn't like to try vegetables and only likes to eat chicken nuggets.  So, i became very concerned about my daughter's eating habits.  i needed to find ways to get her to eat more vegetables.  This recipe that i am going to share has the solution.

     Ingredients: 1 package Angus ground beef, 1 carrot finely chopped, 1 small zucchini finely chopped, 1 cup cooked broccoli chopped, 1/2 extra firm tofu mashed, 2 tsp sesame oil, pinch of salt,pepper, 3 eggs, 1 cup flour

1. In large bowl, mix first 9 eight ingredients and stir together.

 2. As shown in the picture below, crack 3 eggs in a small bowl and whisk together.  in shallow plate, spread 1 cup flour across the plate.  Make beef mixture into bite-sized flat circles.



3.  Now Heat vegetable oil in the pan over medium heat.  put the bite-sized beef in flour and egg mixture next.  Do this one at a time.  And then cook them in the pan until brown.  


4.  Serve with BBQ sauce, ketchup or any type of sauce that your kiddos like.
